From the idyllic slope of Fujian province, China, White Peony, also known as Pai Mu Tan, "白牡丹" is a fruity mild tea made from 2 young tea leaves and 1 unopened tea buds or shoots. The tea leaves were allowed to wither dry after harvest and the natural oxidation of withering gave the tea leaves its mild floral and little fruity flavor. It also resulted the silvery-white hair, hence the nick name Hairy Monkey tea. Bai Mudan is sometimes preferred by white tea drinkers for its fuller flavor and greater potency than the other major type of white tea. |

Brewing Method |
| Quantity Regular 1 teaspoon for every 8oz cup of water. Steeping Steeped to 2 minutes. Temperature Hot water at 175°F to 180°F. Water Mineral Water is highly recommended because it enhances the flavor with mineral. Hard water results in a flat taste while distilled water without any mineral will brew a tasteless tea. |
